Summer is right around the corner, which means bbqs and dinner parties galore! Shrimp stuffed avocados with mango salsa are an easy and quick appetizer. I’m a big fan of avocados and I’m always looking for new ways to eat them, though I admit they’re delicious on their own.
Here’s what you’ll need:
1 lb of cooked baby shrimp
1 large sliced mango
1 bunch of cilantro
Although you can buy store made mango salsa (trader joe’s has an excellent one), it is easy enough to make your own. Simply chop your onion, tomato, jalapeno, mango, and cilantro and mix them in a bowl. Squeeze your lime and add some zest to the salsa, season with salt to taste. Next, add your cooked baby shrimp to the salsa and mix it up. It will look something like this:

Next, grab a plate, cut your avocados in half, take out the pits, peel them, and stuff them with your yummy shrimp and mango salsa concoction. I like a little extra spice, so I add some siracha* to the final product and boom, it’s done!
